I use my home-canned tomatoes, but a 15-oz can of crushed or diced tomatoes—or tomato sauce—will work just as well. Crumble a handful of plain tortilla chips in each soup mug or bowl. Ladle soup over the chips, garnish with shredded cheese and serve. Ready in 20 minutes. The package makes 8 cups of soup.
