Colby is a cheese produced from a mixture of Colby and Monterey Jack cheeses. Longhorn is a 6″ round form. The cheese has a semi-hard texture with a softness comparable to that of a Mozzarella. The flavor of Colby-Jack is mild to mellow with tiny orange and white marble look to it.
