Use bland grocery store beer ( non-exotic and non-fruity). Or substitute white wine, ginger ale or apple juice. Use your favorite cheese. (I like extra sharp cheddar.) Prepared soup holds perfectly in a slow cooker, so you can serve this sure winner at a potluck or Super Bowl party.
